- 2 large ripe tomatoes
- 250 g mozzarella
- 3 fresh figs
- 2 spring onions
- Fresh basil leaves
- 1 tsp sesame seeds
- ½ tsp chili flakes
- 1 tbl spoon Extra virgin olive oil
- pinch Salt and pepper
Rinse the tomatoes and cut them into very thin slices, carpaccio-style. Arrange them over a large flat serving plate. Season lightly with salt and drizzle with olive oil.
Drain the mozzarella and cut it into slices. Slice the fresh figs as well and arrange both over the tomatoes.
Finely slice the spring onions into small rings and scatter them over the salad.
Season everything with pepper, salt, chili flakes and sesame seeds, then finish with a generous drizzle of good extra virgin olive oil. If you like balsamic vinegar, you can add a few drops as well.
Let the salad rest for about 15 minutes before serving. This allows the juices from the tomatoes to come out and blend with the olive oil and seasonings.
And don’t forget some fresh bread — soaking up all those delicious juices at the bottom of the plate is one of the best parts!
Summer is drawing to a close (although we’re still enjoying high temperatures here in the south) and the figs are at their best. We have two fig trees in our garden, so I’ve been enjoying this nutritious fruit since July. I just couldn’t resist posting another fig salad online…
Simple ingredients can create the most delicious meals. This Caprese salad with fresh figs comes together in just a few minutes and is full of fresh Mediterranean flavours.
Tomatoes provide vitamin C and lycopene, while mozzarella adds protein and calcium. Fresh figs bring natural sweetness, fibre and several important minerals, and extra virgin olive oil adds mainly unsaturated fats.
You don’t need complicated techniques or unusual ingredients for this recipe. The key is to choose ripe tomatoes, fresh figs and a good-quality olive oil. Letting the salad rest for about 15 minutes helps all the flavours and juices come together beautifully.
Serve with fresh crusty bread to soak up every last drop of the tomato and olive oil dressing.
