Fig salad with feta cheese and almonds

Ingredients

  • 10 figs fresh
  • 2 lettuce hearts
  • 4 sun-dried tomatoes
  • 100 gr feta
  • 1 tbl spoon olive oil
  • ½ tea spoon chili flakes
  • 30 gr raw almonds peeled
  • 1 tbl spoon honey
  • salt and pepper
  • 1 tbl spoon olive oil

Instructions

  • The day before:
    Cut the feta into cubes. Mix 1 tablespoon of olive oil with the chilli flakes and stir into the feta. Leave the cheese to marinate in a sealed container in the fridge for 24 hours.
  • Rinse and dry the lettuce hearts and cut them into strips. Chop the sun-dried tomatoes and mix with the lettuce. Mix this with 1 tablespoon of olive oil and season with salt and pepper. Place this mixture on the bottom of a serving dish.
  • Rinse the figs and cut them in half. Finely chop the almonds with a knife. Remove the oil from the feta cubes.
  • Place the figs and feta on top of the salad mixture. Sprinkle with the almonds and drizzle with a little more olive oil and honey.
