Smoked salmon tartare with mango and avocado

Ingredients

  • 200 gr smoked salmon
  • 1 big mango
  • 1 spicy red pepper little
  • 2 avocado
  • ½ lemon juice
  • 1 tbl spoon olive oil
  • 1 handful coriander
  • ½ red onion
  • 1 tablespoon capers
  • 1 tablespoon kimchi corean spicy sauce
  • 1 tablespoon mayonnaise
  • salt and pepper
  • 1 tablespoon truffle pearls optional

Instructions

  • Cut the mango lengthwise in half just next to the stone and do the same with the other half. Remove the skin and cut into small cubes. Place these in a bowl. Remove the seeds from the red chilli pepper (use a maximum of 3 cm) and chop into small pieces. Mix the mango with the spicy pepper.
  • Remove the pit and peel from the avocados. Cut them into small cubes, mix with the juice of 1/2 lemon and season with salt and pepper. Chop the coriander and mix it into the avocado together with 1 tablespoon of olive oil.
  • Finely chop the red onion.
    For the smoked salmon, I always buy a chunk (not slices). This can be easily cut into cubes. Mix the salmon with the kimchi, mayonnaise, capers and finely chopped red onion.
  • Take the dressing ring and first place a layer of avocado. Press down firmly, including around the edges. Next, add a layer of mango, pressing down firmly again. Finally, add the salmon. Finish with truffle pearls, extra coriander or a slice of lemon, for example. Serve with crackers.

I finished it off with truffle pearls, extra coriander and a slice of lemon. This is an elegant starter that combines fresh, spicy and savoury flavours. Ideal for a dinner where you want to impress, but still be ready in less than 20 minutes.
