Ingredients

  • 3 lettuce heart
  • 50 gr lamb´s lettuce
  • 400 gr peas frozen
  • 1 l vegetable broth
  • ½ onion
  • 1 clove garlic
  • 50 ml coconut cream or similar
  • 2 slices bread
  • 2 tbl spoon olive oil
  • salt and pepper

Instructions

  • Boil 200 g of peas until tender in a separate pot and set aside. We will add these to the soup afterwards.
  • Rinse the lettuce hearts and corn salad. Cut the lettuce hearts into strips. Shred the onion and garlic.
    Put 1 litre of vegetable stock in a saucepan and add all the lettuce, onion, garlic and the other 200g of peas. Simmer until the peas are tender. Blend into a homogeneous soup. Season with salt and pepper. Add the previously cooked peas and return to the heat. Leave to warm up a little more.
  • Cut the slices of bread into 1 cm cubes. Put the oil in a pan and fry the crusts until golden brown, crispy.
  • Ladle the soup into plates, adding some cream and crusts to each plate. Serve with fresh baguette.
