Melon salad with smoked salmon

Ingredients

  • ½ watermelon
  • ½ cantaloupe melon
  • ½ honeydew melon
  • 8 gr mint freshly chopped
  • 2 tbl spoon honey
  • 125 gr mozzarella mini
  • 120 gr smoked salmon
  • 1 tea spoon dill freshly chopped
  • ¼ tea spoon chili flakes
  • 1 tbl spoon olive oil

Instructions

  • Using the scoop spoon, remove scoops from the 3 melons. (You can use the rest for a smoothie or fruit salad)
    Drain the mozzarella balls
  • Make the dressing:
    Mix the honey with the fresh mint, olive oil and chilli flakes. Stir well.
  • Mix together the melon and mozzarella balls and divide among 6 glasses. Drizzle them with the dressing.
    Divide the salmon into 6 parts and place on top of the melon. Top with fresh dill.
