Pineapple, yogurt, and mint ice lollies

Equipment

  • cutter / blender
  • 8 ice lolly moulds

Ingredients

  • 1 pineapple
  • 3 tbl spoon yogurt
  • 1 tbl spoon jarabe de arce
  • ½ tea spoon vanilla powder
  • 1 tbl spoon milk
  • 1 handful mint leaves fresh
  • ½ juice from ½ lime
  • 150 ml water

Instructions

  • If you have a fresh pineapple, remove the hard core and the outer skin. Cut into slices.
    Cut 1 slice into small pieces.
  • Mix the yoghurt with the maple syrup, vanilla, milk and finely chopped pineapple pieces. Use a spoon to scoop this into the moulds so that the bottom is filled.
  • Cut the rest of the pineapple into large chunks, finely chop the mint and mix it with the juice of 1/2 lime and 150 ml water.
    Put this in a food processor/blender and blend until smooth. I didn't add any sugar because the pineapple was already sweet and I wanted to keep it a healthy ice cream ;-)
  • Once everything is finely ground, use a spoon to fill the moulds. I have moulds that I can insert a stick into straight away. Put them in the freezer and enjoy this healthy summer ice cream the next day.

These homemade ice lollies are a summer treat on a stick.
With juicy pieces of fresh pineapple, creamy yoghurt, a hint of lime and fresh mint, they are perfectly balanced: not too sweet, deliciously refreshing and surprisingly light. The combination of tropical fruit and soft dairy makes them ideal as a healthy snack or dessert on hot days.
Tip: Use full-fat yoghurt for extra creaminess or plant-based yoghurt for a lactose-free version.
Store them in the freezer in their moulds or an airtight box and enjoy a taste explosion with a touch of holiday feeling whenever you want 🌞🍍
