Notes

This red lentil soup with orange and ginger is a simple recipe that packs a lot of flavour with few ingredients. Red lentils cook quickly and provide plant-based protein, fibre and minerals. The combination of onion, garlic and fresh ginger provides a warm base flavour, while orange adds a fresh, light citrus note that pairs well with lentils.
The soup has a naturally smooth texture because red lentils break down easily. This makes the soup ideal for serving in small glasses at a party or dinner. The flavour is distinct but not heavy, making the dish perfect as an appetiser, small starter or part of a party buffet. The topping of fried onions and chives adds a crunchy accent and makes the dish suitable for a party table.
