Ingredients
  

  • 250 gr red lentils dried
  • 2 oranges
  • 600 ml vegetable broth
  • 1 clove garlic
  • 4 cm ginger fresh
  • 1 onion
  • ½ leek
  • 2 tbl spoon olive oil
  • salt and pepper
  • 3 tbl spoon fried onions
  • 2 tbl spoon chives chopped

Instructions
 

  • Rinse the red lentils until the water runs clear. Set aside.
    Chop the onion, leek and garlic into small pieces.
  • Put 2 tablespoons of olive oil in a deep pot and sauté the onion, garlic and leek.
    Add the stock and lentils. Leave to simmer for 20 minutes on a low heat.
  • Peel 1 orange and cut it into pieces. Squeeze the juice from the other one.
  • Once the lentils are cooked, add the orange pieces and juice. Season with salt and pepper. Grate the ginger and add it to the soup.
    Remove the pot from the heat and blend until smooth. Taste and season again if necessary.
  • Fill the glasses and finish with fried onions and finely chopped chives. And just like that, you have a festive soup… lentils are also delicious and festive.

    Hi, I wanted to make this soup but it does not specify how much stock to use (unless my eyesight is failing 🫣🤣). Please may you advise. Thank 🙏🏼

      Indeed I forgot to put the “stock”. I start with 600 ml. After nlending and if the soup is too thick than you can still ad some extra… Greetings, Patricia
