Manager Mireille of Welness and Welbeing “Puur Mooi” asked me to develop a suitable daily menu for the “detox cure” she offers her customers. A menu that is feasible for a wide audience and that she can build on together with the customers. See a summary of the result below. The term “DETOX” or detoxification is gaining more and more popularity. Balancing your body is therefore extremely important. But you often see that the proposed “DETOX cure” consists of juices and smoothies. These can certainly be healthy, but due to the lack of “a bite” also quickly lead to a feeling of hunger. By limiting yourself to just juices, you often create a shortage of other nutrients and unfortunately these “juice cures” cannot be sustained for long. That is why an example of a full daily menu has been developed based on the Mediterranean diet in which vegetables, fruit, legumes and whole grains have the leading role. The result of a collaboration between Puur Mooi and Secretos Del Sur. Its purpose is to stimulate the body in getting rid of toxins. Chia pudding with almond or coconut milk, warm cinnamon apples, homemade nut crunch and mint.

Start your day with an unsweetened and filling breakfast …

A delicious and filling breakfast. You can make the pudding the night before so that a jelly-like substance is released with the chia seeds and you get a pudding. You also save time during the morning.

Chia seeds are easy to digest and can be included in your diet in various ways. Chia is an excellent source of omega 3 fatty acids. In addition, it is full of important nutrients and antioxidants that help you to keep your body and metabolism in optimal shape.

Meal soup of black lentils, pumpkin, carrot and ginger


According to the Mediterranean diet, legumes are mainly consumed at noon. You can easily prepare this soup in advance so that you can heat it up at work or at home. The lentils I use in this recipe are the black “beluga” but you can just as well use the brown or green lentils. Be careful with the orange or yellow, these are peeled and they lose their structure during cooking. I mainly use these for stews or tagines.

Grilled Halloumi with oven-cooked zucchini, asparagus and parsley pesto


You can cook vegetables quickly and easily in the oven. Make a herbal oil that you season with, for example, garlic,
paprika or even saffron. Mix these with your sliced vegetables and spread them on a baking dish lined with parchment paper. Depending on the type of vegetables and the thickness of the pieces, they are ready after about 20 minutes of cooking at 180º. The combinations are endless, as are the flavors.
