Ingredients
  

  • 5 tomatoes ripe, not too big
  • ½ t spoon salt
  • 250 ml olive oil
  • 2 twigs rosemary
  • 2 cloves garlic
  • 6 jamaica peppercorns

Instructions
 

  • Turn on the oven at 60º and on the -warm air- position
    Rinse the tomatoes and cut them in half. If you want it to go faster, cut them into quarters. Line the baking tray with baking paper and place the sliced tomatoes on it, neatly next to each other. Sprinkle over the salt and place in the oven.
  • Keep in mind that this can take up to 12 hours in total. During the warm summer months we can dry the tomatoes in the sun, but you need 5 to 12 days for that too.
  • Regularly check whether the drying process is going well and whether you need to lower the temperature to, for example, 40º. (depending on the oven)
  • In the meantime, prepare the jar. Cut the garlic into slices and rinse the rosemary. Put the oil in the jar together with the rosemary, garlic and peppercorns.
  • Once the tomatoes have dried, let them cool. Then put them in the jar with oil and herbs. You can easily keep this in the fridge for 2-3 weeks.

Notes

Want to make your own dried tomatoes? It’s possible, even if you don’t have a lot of sun… It is such a tasty seasoning for many dishes that I can no cook without them. The sun-dried tomatoes are super tasty, but even here in the south of Spain we don’t always have enough sun. So,  I get started with my oven. Try it yourself…
