Muffins with cherries, pistachio and lime

Equipment
- oven
- beater
- 12 muffin mold paper / silicone
- muffin baking mold iron / silicone
Ingredients
- 250 gr cherries verse
- 125 gr melted butter
- 125 gr sugar
- 275 gr flour
- 2 eggs large
- 4 tbl spoon milk
- 10 gr baking powder
- ½ juice ½ lime
- 1 zest lime
- 50 gr pistachio nuts
- 15 gr pearl sugar
Instructions
- Preheat the oven to 180ºBeat the eggs with the whisk. I do this on the highest setting of the beater. Add the sugar and keep beating. Then add the melted butter (cooled), lime juice and milk. Meanwhile, keep whisking.
- Bit by bit, add the flour (sieve first), then the baking powder and the zest. As soon as I add the flour, I use the whisk on the lowest setting. I always add a pinch of fine salt to sweet but that is optional.
- Now mix further with a spatula. Pit the cherries and cut them in half or in 4. Mix them under the dough. (Set some aside to put on top afterwards) Finely chop the pistachio nuts and mix these in as well.If necessary, you can still add a tablespoon of milk to make the dough a little smoother. But in my case this was not necessary.
- Place a paper or silicone cake pan in each mould of your muffin baking tin.
- Fill each tin to just below the rim (+/- 5 mm). The cakes will rise and then come to above the edge. Push some sliced cherries on top, sprinkle with the pearl sugar and some extra finely chopped pistachios.
- Bake in the oven for 25 min at 180º. Prick with a stick to see if the cakes are cooked inside, if not, leave them for another 5 minutes.
- We ate them warm with a scoop of vanilla ice cream and it was delicious!
