Notes

The month of February is almost half way and temperatures here in southern Spain continue to hover above 20º. Spring is coming soon… But not everywhere weather is so warm and sunny. Well, then definitely try this salad and you will immediately bring the sun to your table. This salad brings both, summer and winter together. If you are a fan of fruits, feel free to add some apple or experiment with other seasonal fruits. For me, this is a perfect lunchtime meal salad.
