Mussels salad

Ingredients
- 300 gr mussels without shell
- 1 celery stick
- 1 sweet red pepper
- ½ red onion
- 1 hardboiled egg
- 1 handful rocket salad
- 2 tbl spoon chives chopped
- 1 handful sprouts radish
- 3 tbl spoon mayo
- salt and pepper
Instructions
- I bought the mussels pre-cooked (sometimes things have to be quick for me too). If you buy them fresh, you have to steam them with onion, celery and pepper.
- Finely chop the vegetables, red onion, pepper and celery. Crumble the egg.
- Put everything (except the sprouts) together in a large mixing bowl. Season with salt and pepper. Mix everything together well. If you like tarragon, add another 1 tsp of dried tarragon.
- Divide the salad on a plate and top with the sprouts.
