Ingredients
  

  • 300 gr mussels without shell
  • 1 celery stick
  • 1 sweet red pepper
  • ½ red onion
  • 1 hardboiled egg
  • 1 handful rocket salad
  • 2 tbl spoon chives chopped
  • 1 handful sprouts radish
  • 3 tbl spoon mayo
  • salt and pepper

Instructions
 

  • I bought the mussels pre-cooked (sometimes things have to be quick for me too). If you buy them fresh, you have to steam them with onion, celery and pepper.
  • Finely chop the vegetables, red onion, pepper and celery. Crumble the egg.
  • Put everything (except the sprouts) together in a large mixing bowl. Season with salt and pepper. Mix everything together well. If you like tarragon, add another 1 tsp of dried tarragon.
  • Divide the salad on a plate and top with the sprouts.

Notes

This mussel salad combines mussels with vegetables, egg and a mild mayonnaise sauce. The celery, red pepper and red onion provide bite and a slight sweetness. Rocket adds some sharpness, and the chives bring a fresh touch.
The mussels are the main ingredient. They go well with the simple dressing of mayonnaise, egg, pepper and salt. The radish sprouts on top finish it off, both in flavour and presentation.
This salad is suitable as a lunch or starter. It can be prepared well in advance, and is nice and fresh on hot days. If desired, serve with bread or potatoes for a ful meal.
