Potato salad with mussels
Equipment
- cooking pot
- frying pan
Ingredients
- 1 kg mussels with shell
- 600 gr potatoes or baby potatoes
- 2 tbl spoon olive oil
- 15 cherry tomatoes
- 3 radish
- ½ red onion
- 2 spring onion
- ½ tbl spoon chives
- 2 tbl spoon mayo
- 3 twigs thyme
- 1 lemon
- ½ onion
- 50 ml white wine
- 1 pinch white pepper
- salt and pepper
Instructions
- Clean the mussels (remove algae, beard,…) Place them in ice-cold water for ½ hour. Cut the white onion into rings. Take a saucepan and add the white onion, wine, a sprig of thyme and the mussels. Sprinkle with white pepper. Place the lid on the pot and steam the mussels. After 10 minutes, shake the pot and let it steam for another 5 minutes. Remove the mussels from their shells and set aside.
- Rinse the potatoes / new potatoes. Boil them until done. Let them cool. If you use large potatoes, cut them into large pieces. Put the olive oil in a pan and fry the potatoes until they get a crust. Season them with salt, pepper and the rest of the thyme. Set aside and let cool.
- Cut the radishes into fine slices (can also be done with a mandolin). Cut the red onion and spring onion into fine rings. Chop the chives.
- Take a large serving dish. Mix all ingredients together with the mayonnaise and season with salt and pepper if necessary. Add some lemon wedges..
