Rinse the baby potatoes. If you can't find small potatoes, use the regular hard boiling potato and cut it into pieces after cooking. Make sure you don't let the potatoes cook too long because then they fall apart when skewered.Boil the baby potatoes until al dente (depending on the thickness). Rinse them under cold water and let them cool.
Make a herb oil for the skewers with 2 tablespoons of olive oil, pepper, salt and rosemary. Mix the cold potatoes with this oil.
Cut the pineapple into slices of +/- 2 / 3 cm thick and remove the skin. Then cut into cubes of 2-3 cm. I did not use the hard center part (you can mix it in the blender with some coconut water and strain. A wonderfully refreshing summer drink)
Make the marinade for the pineapple cubes. Mix 2 tablespoons of olive oil with the honey, finely chopped chili pepper (without seeds), pepper and salt.Mix the pineapple cubes in this marinade and refrigerate for 1 hour.
Now skewer the baby potatoes and pineapple alternately on the skewers. Grill them in the pan or BBQ. Sprinkle some spicy paprika powder on top and if wanted some coarse salt…
