Ingredients
  

  • 250 gr orzo pasta
  • 200 gr cherry tomatoes
  • 200 gr feta cheese
  • 2 tbl spoon basil freshly chopped
  • 3 tbl spoon olive oil
  • salt and pepper

Instructions
 

  • Cook the orzo pasta according to the instructions on the package. Then put it in a sieve and drain the water. Mix with 1 tablespoon of olive oil and let cool down.
  • Rinse the tomatoes and cut them into quarters.
    Shred the basil leaves.
    Cut the feta into cubes. Here I used cubes of feta from a jar that have already been marinated. (Discard the excess oil)
  • When the pasta is cold, mix it with the sliced tomatoes, basil, feta and 2 tbsp olive oil. Season with salt and pepper.
    Cover your bowl with freshness foil and put it in the fridge for an hour.
    I serve this pasta salad as a side dish during a BBQ or together with some fried fish or gambas.

This salad is not only tasty, but also easy to adapt to your personal preference. For example, you can add cucumber, black olives, roasted peppers, or tuna.
