Papillot of fruit with Mascarpone and vanilla

Because I don’t like sweets, I tend to reach for fruit for dessert. For a festive meal this may be accompanied by a scoop of ice cream or, as here, with Mascarpone. The natural sweetness of fresh fruit and the creamy, rich texture of mascarpone is a heavenly combination. The subtle touch of vanilla adds an extra flavor dimension. Whether you choose seasonal fruit such as apples, pears, or berries, the flavor of each piece of fruit only becomes stronger in the papillote. The fresh, creamy Mascarpone is a nice contrast.

Ingredients
  

For the Mascarpone:

  • 100 gr mascarpone
  • 2 egg white
  • 1 package vanilla sugar
  • 1 pod vanilla

For the papillot:

  • 1 orange
  • 20 grapes
  • 100 gr blueberries
  • 8 strawberries
  • 8 mulberries
  • 4 tbl spoon honey
  • 4 cinnamon stick
  • ½ teaspoon cinnamon
  • few mint leaves

Instructions
 

For the Mascarpone:

  • Beat the 2 egg whites until stiff. Halve the vanilla pod and scrape out the seeds. Carefully mix the mascarpone, sugar and vanilla seeds into the egg whites with a spoon. Place in the refrigerator.

For the papillot:

  • Preheat the oven to 180º.
    Cut 4 sheets of baking paper (as long as they are wide). Peel the orange and cut the segments out from between the membranes. Rinse the grapes, berries and strawberries. Halve the strawberries.
  • Divide the fruit over the four sheets of baking paper. Place the cinnamon stick in between. Sprinkle the fruit on each sheet with 1 tablespoon of honey and a pinch of cinnamon powder. Now fold the parcels closed and, if necessary, tie the sides closed with string. Place the papillot on an oven tray and heat for 15 minutes at 180º.
  • Serve each papillot with a generous spoonful of Mascarpone mixture and a few mint leaves.
