Quinoa – tomato spaghetti with veggies
Ingredients
- 250 gr spaghetti
- 1/2 courgette
- 5 tomatoes
- 1 can tomato paste 125 gr
- 200 gr mushrooms
- 1 red sweet pepper
- 1/2 onion
- 2 clove garlic
- 1 tblsp oregano
- 1 tsp spicy pepper powder
- 4 tblsp olive oil
- 4 tblsp grated parmesan
Instructions
- Cut the mushrooms into pieces and fry them in a little olive oil, then set aside. Now cut the other vegetables into small cubes such as zucchini, red pepper, garlic and tomatoes. Let everything fry in a pan until it is al dente. Add the mushrooms and tomato paste. Stir well. Now add the oregano and season with the spicy paprika, salt and pepper. If needed you can add some water or vegetable broth to have more sauce.
- Bring a large pot of water to boil and cook the quinoa spaghetti al dente. drain the water and stir some olive oil unther the pasta. Serve in deep plates. Finish with some grated Parmesan.
