Caprese tartare, flavours of Italy

Ingredients
- 25 cherry tomatoes
- 125 gr Mozzarella
- 2 tea spoon capers
- 1 tbl spoon olive oil
- 5 gr basil
- salt and pepper
Instructions
- Rinse the cherry tomatoes. Cut them into very small pieces. Put them in a sieve and drain.
- Also drain the mozzarella and cut into small cubes. Finely chop the basil.
- Place the tomatoes in a mixing bowl and season with salt and pepper. Add the mozzarella, capers and basil along with one tablespoon of olive oil.
- I presented the tartare in individual plates with a ring. Finish with some balsamic vinegar and extra basil leaves, if desired

Caprese tartare is inspired by the classic Italian ‘Insalata Caprese’, a simple but iconic dish from the Campania region, specifically the island of Capri. This dish is known for its honest, pure flavours and the use of fresh ingredients such as tomatoes, mozzarella, basil and olive oil. The simplicity and quality of the ingredients make the Caprese a much-loved salad worldwide.
In this modern version, the Caprese tartare, the ingredients are finely chopped and combined into a fresh tartare. Tomatoes form the base and are accompanied by soft cubes of mozzarella. Capers add a subtle, salty touch, while fresh basil provides an aromatic, spicy touch. The olive oil – extra virgin – rounds it all off.
The dish is a sophisticated taste sensation that is perfect both as an appetiser and a light lunch. Caprese tartare offers a fresh take on an Italian classic and highlights the importance of quality ingredients.Nutrition
