Egg muffin, mediterranean savory frittatas

- muffin mold
Ingredients
- 6 eggs
- ¼ green pepper
- ¼ red pepper
- 1 tbl spoon chopped red onion
- ½ twig spring onion
- 5 cherry tomatoes
- 2 tbl spoon feta cheese
- 50 gr fresh spinach
- 3 dried tomatoes
- salt and pepper
- 1 tbl spoon olive oil grease the mold
Instructions
- Preheat the oven to 160ºGrease the muffin mold with olive oil. If you have cupcake papers, it is best to use them to bake the muffins
- Put a little oil in a pan and stew the spinach until the leaves have shrunk.
- Cut the tomatoes into 4s. The rest of the vegetables in very fine cubes. Cut the spring onion into fine rings.
- Beat the eggs and season with salt and pepper.
- Fill each muffin tin with 1/2 of the egg. Then divide the spinach and vegetables over it. To finish add the feta and the chopped dried tomatoes.
- Place in the oven for 20 minutes at 160º. The muffins will rise during baking. As soon as they cool they collapse a bit, but the flavors are heavenly….
