Risotto of pearl couscous with tomato, pepper and Mozzarella
Pearl couscous, also known as ‘Israeli couscous,’ is a unique pasta variant distinguished by its round-shaped grains, resembling small pearls. - deep frying pan
- mixer / blender
Ingredients
- 250 gr pearl couscous
- 20 gr butter
- 20 gr Parmesan cheese
- 10 sage leaves
- 1 ball Mozzarella
- salt and pepper
to prepare the sauce:
- 1 red pepper
- 1 tomato
- 1 clove garlic
- ½ onion
- 2 tbl spoon tomato paste
- 2 tbl spoon olive oil
- salt and pepper
Instructions
- Cut the tomato, pepper and onion into pieces. Grate the garlic clove. Put 2 tbsp olive oil in a deep pan and stew the vegetables for 10 minutes. Stir in the tomato paste. Mix them into a smooth sauce with a mixer or blender. Season with salt and pepper.
- Rinse the pearl couscous briefly with water. Put it in the pan with the sauce together with the chopped sage leaves. Let this simmer on a low heat until the pasta is done. Stir regularly. Stir in the butter and cheese. Season with salt and pepper.
- Drain the Mozzarella. Tear it into pieces and place them on top of the pearl couscous risotto.
