Ingredients
  

  • 250 gr pearl couscous
  • 20 gr butter
  • 20 gr Parmesan cheese
  • 10 sage leaves
  • 1 ball Mozzarella
  • salt and pepper

to prepare the sauce:

  • 1 red pepper
  • 1 tomato
  • 1 clove garlic
  • ½ onion
  • 2 tbl spoon tomato paste
  • 2 tbl spoon olive oil
  • salt and pepper

Instructions
 

  • Cut the tomato, pepper and onion into pieces. Grate the garlic clove. Put 2 tbsp olive oil in a deep pan and stew the vegetables for 10 minutes. Stir in the tomato paste. Mix them into a smooth sauce with a mixer or blender. Season with salt and pepper.
  • Rinse the pearl couscous briefly with water. Put it in the pan with the sauce together with the chopped sage leaves. Let this simmer on a low heat until the pasta is done. Stir regularly. Stir in the butter and cheese. Season with salt and pepper.
  • Drain the Mozzarella. Tear it into pieces and place them on top of the pearl couscous risotto.
