Runner beans with tomato and chili yogurt

Ingredients
- 500 gr runner beans
- 300 gr cherry tomatoes
- 1/4 onion
- 1 clove garlic
- 1 tomato
- 1 teaspoon tomato paste
- 125 gr yogurt
- 1 teaspoon harissa
- 1 handful basil fresh
- 200 ml vegetable broth
- 3 tablespoon olive oil
- salt and pepper
Instructions
- Place a pot of water with a pinch of salt on the heat and let it boil.Rinse the runner beans and cut off the ends. With a knife or scissors, cut the beans diagonally into pieces of 2-3 cm. Put them in the boiling water and cook them for 6-8 minutes.
- Cut the onion and tomato into small pieces (not the cherry tomatoes). Grate the garlic clove.Put olive oil in the pan and stew the onion together with the tomato cubes and the garlic. Add the tomato paste and pour over the vegetable stock. Season with salt and pepper.
- Rinse the cherry tomatoes and add them. Place the lid on the pan and let it stew on a low heat. Stir occasionally. When they start to cook (their skin will tear), add the runner beans. Warm everything up.
- Take 2 tbsp olive oil and mix with the harissa. Divide the yogurt over the beans and sprinkle with the chili oil. Finish with some fresh basil leaves.
