Creamy soup with clams

I’m really a soup fanatic… I make them in all kinds of combinations. Delicious warming soups during the winter and deliciously fresh soups in the summer.In my opinion, a festive meal also includes a soup… It gets really interesting when it is a simple recipe that does not require hours of preparation in advance.This is such a fantastically tasty and simple recipe that fits perfectly on the festive table.
Equipment
- cooking pot
- stew pan with lid
Ingredients
- 300 gr clams vongole
- 20 gr parsley
- 2 leek
- 1 potato
- 1 clove garlic
- 1 onion
- 750 ml vegetable broth
- 200 ml cream
- 50 ml white wine
- 2 tbl spoon olive oil
- salt and pepper
Instructions
- Place the clams in cold water for at least 1 hour to release the sand. Put 1 tbsp olive oil in a pan and place on the heat. Add the clams and season with white pepper. (no salt) Place the lid on the pan and let it stew for 3 minutes. The shells will open. Deglaze with the white wine, stir with a spoon and let steam for 2 more minutes. Place the clams in a sieve, filter the liquid and set aside 100 ml to add to the soup.
- Peel the potato and cut into pieces as well as the onion. Cut the leek into slices. Grate the garlic clove. Put 1 tbsp olive oil in a cooking pot and stew the onion, garlic, leek and potato for about 5 minutes. Pour over the vegetable stock. Let the vegetables cook. Add the parsley and mix into a fine soup.
- Place the pot back on the heat and stir in the cream together with 100 ml of the cooking liquid from the clams. Season with pepper if necessary. Before adding salt, first taste because the liquid coming from the clams can be salty.Warm the soup but do not let it boil anymore. Add the shells at the end.
- Divide the soup and the clams among the plates and finish with some extra parsley.
