Equipment

  • frying pan
  • oven to prepare the granola

Ingredients

  • 1 apple
  • ½ tbl spoon cane sugar
  • ½ teaspoon cinnamon
  • 100 gr greek yogurt
  • 3 tbl spoon seeds granola homemade
  • ½ tbl spoon honey
  • 10 gr butter

To prepare the seeds granola (+/- 300 gr):

  • 4 tbl spoon pumpkin seeds
  • 4 tbl spoon sunflower seeds
  • 5 tbl spoon poppy seeds
  • 4 tbl spoon flax seeds
  • 4 tbl spoon sesame seeds
  • 2 tbl spoon maple syrup
  • 2 tbl spoon coconut oil

Instructions

This is how I make my seeds granola:

  • I always make a larger quantity of granola that I can store and use for about two weeks.
    Preheat the oven to 160º.
Mix all the seeds together. You can make and vary the combination of seeds yourself.
Add 2 tablespoons of melted coconut oil and the maple syrup.
If you like cinnamon, you can add a pinch of cinnamon.
    Mix everything together well.
  • Line a baking tray with baking paper.
Spread the seeds over the baking paper.
Bake for 10 minutes at 160º. Then mix the seeds together again with a spatula, spread them out and bake for another 10 minutes at 160º.
    Let them cool.
You can store them in a hermetically sealed jar for 2-3 weeks.

The baked apple breakfast:

  • Rinse the apple clean. Remove the core with an apple corer. If you don't have an apple corer, first cut the apple into slices of +/- 5 mm and then use a knife to remove the core inside.
  • Put the butter in a frying pan and heat over a medium heat.
When the butter has melted, place the apple slices next to each other in the pan.
Sprinkle them with a little cane sugar and cinnamon and bake for 5 minutes.
Turn the apple slices over and sprinkle this side with cane sugar and cinnamon.
  • When the slices turn a nice golden yellow, turn off the heat.
  • Spoon the Greek yogurt into a breakfast bowl. Place the apple slices on top together with 3 tablespoons of granola seeds.
Drizzle with 1/2 tablespoon of honey.
If you are a fruit lover, you can also add some raspberries or blueberries.
